For the Strawberry Ice
4 x Munch Bunch® Double Up Fromage Frais
100g (3½oz) fresh strawberries, chopped
3tbsp strawberry fruit sauce
2 x strawberry Munch Bunch® Mega Pots
115g (4oz) caster sugar
250g (9oz) self-raising flour, sieved
4tbsp sunflower oil
2 eggs, beaten
To serve:
Fresh peaches, sliced
You will also need:
900g (2lb) loaf tin, lined with baking parchment
Method
- Start by making the strawberry ice: spoon the Munch Bunch® Double Up into a freezer proof bowl and add the strawberries. Swirl through the strawberry sauce and place in the freezer for 2-3 hours until solid.
- Preheat oven to 180°C, 375°F Gas Mark 4.
- Place the yoghurt into a large mixing bowl. Add the sugar, flour, oil and eggs. Mix together until smooth. Pour into the tin and bake for 40 minutes until well risen and golden. Insert a skewer into the cake - it should come out clean when it's ready.
- Serve the cake warm with scoops of strawberry ice and slices of fresh peach.
