
Ingredients
350g (12oz) fresh salmon (approx 2 fillets)
150g (5½oz) broccoli florets
100g (3½oz) frozen peas
4 eggs, beaten
150ml (¼pt) milk
115g (4oz) half fat Cheddar cheese, grated
Method
- Preheat the oven to 180°C, 350°F, Gas Mark 4.
- Place the salmon fillets into a microwave safe bowl. Cover with film and microwave for 1-2 minutes. Leave to stand for a few minutes before flaking into bite sized pieces.
- Boil the broccoli for 2 minutes only, adding the peas for the last 30 seconds. Strain and rinse under cold water.
- Arrange the salmon, broccoli and peas in a pie dish or ovenproof dish.
- Beat together the eggs, milk and half the cheese. Pour gently over the salmon, broccoli and peas. Top with the remaining cheese.
- Bake in the oven for 30-40 minutes until set. Cut into slices and serve. Also great cold in packed lunches or picnics!
Variations
Use tinned salmon instead of fresh if you need to be super speedy.
Or try ham, sweet corn and peas or cooked chicken, pepper and tomato.
