Mini Wholemeal Pizzas

Serves 4, Preperation time: 5mins, Cook time: 10mins

Ingredients

4 plain breakfast muffins or wholemeal slices of bread
8tbsp tomato pasta sauce
285g can tuna in spring water, drained
157g can no added sugar or salt sweetcorn, drained
125g pack half fat fresh mozzarella ball, drained and chopped

Method

  • Preheat the grill to its highest setting.
  • Cut the muffins in half to make 8 pizza bases. Place on a foil lined grill pan and toast for about 1 minute on both sides, until light brown.
  • Spread each slice with a tablespoon of pasta sauce and top with tuna, sweet corn and finally mozzarella.
  • Grill until bubbling and hot. Great hot or cold.

Half fat cheddar

Pepperoni and fresh tomato

We've opted for half fat mozzarella cheese in this recipe as some harder cheeses such as Cheddar have a higher fat and salt content and also don't go as stringy and oozy under the grill!
